Ingredients: 2 whole chickens, 3 pounds or less per chicken ½ cup all purpose flour ½ cup milk Salt Crisco

Directions: |
Directions:--Clean, dry chicken and cut up chicken
--Salt each piece of chicken and place in large container
--Add flour, milk and additional salt if needed and mix well with chicken to coat. Batter should be thin but thick enough so chicken stays coated when removed
--Heat crisco in large pot to around 350-360ºF
--Lower basket into hot oil and drop pieces of chicken into basket being careful not to crowd or cause oil temperature to drop excessively.
--Cook on high heat for 3 minutes, reduce heat and cook at around 300ºF for 8 additional minutes
--Turn heat back up to high and cook for 3 more minutes, oil should be about 350ºF when chicken is being removed.
--Lift basket and drain
--Turn chicken onto paper towels to drain
--Repeat as necessary with remaining chicken, ensure oil returns to proper temperature before adding chicken. |

--From Jane: The smaller the chicken, the better. Cut the breast pieces in half.
--From Tim: I remember always cooking this outside in a large cooker over a propane burner, this made temperature control easier and splattering oil didn't mess up the kitchen. Also, don’t crowd the pan and be sure to maintain the oil at the correct temperature so your chicken doesn't taste greasy.
