2 1/2 c. sugar
1 c. shortening
3 eggs
1 1/2 c. mashed bananas
3 c. flour
1 1/2 c. buttermilk
1 1/2 tsp. baking soda
1 1/2 tsp. baking powder
1 tsp. vanilla
1/2 cup chopped nuts (optional)

- Cream sugar and shortening. Add eggs, one at a time. Mix in mashed bananas and vanilla. Add dry ingredients alternately with buttermilk. Stir in chopped nuts.
- Bake in 2 (9 x 5- inch) pans and bake for 45 to 50 minutes at 350 or until wooden toothpick comes out clean when inserted.
- Cool 10 minutes, then remove from pans.
