1 lemon cake mix
¾ c. canola oil
4 eggs
1 pkg instant lemon pudding mix
1 c. lemon soda
2 tsp. lemon extract
1 tsp. vanilla extract
2 c. powdered sugar

Directions:

Mix cake mix, oil eggs, pudding mix, lemon drink, vanilla extract and 1 tsp. lemon extract. Do not over mix. Place in greased 9x13 glass pan. Bake for 30 to 35 minutes till done. Cool for 5 minutes. Prick top of cake with toothpick all over. Mix 2 c. powdered sugar and 1 tsp. of lemon extract. Pour glaze over the top while hot. The glaze should be thinner than regular icing, so that it flows into the cake.

Discovered this recipe at a family reunion of Larry’s. A great aunt had brought it and knew the recipe by heart! I have since tasted this as a Bundt cake and in 9x13 form, and I prefer the 9x13 version. This way the yummy glaze penetrates every bite!
