1 egg
1/2 cup milk
1/4 cup vegetable oil
1 1/2 cups flour
1/2 cup sugar
2 tsp. baking powder
1/2 tsp. salt

Directions:
Directions:
Grease muffin tin. Beat egg with a fork. Stir in milk and oil. Blend dry ingredients.

Bake at 400 for 20 to 25 minutes

Variation: Add a slim can of crushed pineapple (not drained) or jam to the mixture before baking.
