1 Boston Butt (bone in pork shoulder) 5-7 pounds
Basic BBQ Rub (see recipe)
Mop Sauce (see recipe) Set aside some mop sauce for meat after it is pulled apart and for the slaw
Soaked wood chips

Directions:
Directions:
--Light grill and set it up for indirect grilling. The meat should never be over direct heat or flame. Place disposable foil pan under rack that will hold roast.

--Coat meat generously with Basic BBQ Rub

--Add 1 cup wood chips to coals or in a disposable pan near flame

--Place roast fat side up on grill

--Turn every hour cooking until internal temperature reaches 195ºF. (4-6 hours or longer depending on size of roast)

--Begin basting with mop sauce every hour after the first hour

--Add ½ cup wood chips every hour

--When roast is done (should tender enough to be pulled by hand). Remove from grill to large pan, wrap and rest for 30 minutes to one hour then pull meat apart.

--Toss meat with some mop sauce

--Serve on buns with BBQ sauce and coleslaw (for this recipe we use thinly sliced cabbage tossed with some of the mop sauce) if desired

--From Jane: When Nick joined our family I mentioned to him that I sure wished someone in the family would make a good pulled pork. This is the recipe he came up with and it's the best I've ever had! Try it with some of Michael's BBQ Sauce.

--From Tim: I'll agree that this is some of the best pulled pork I've eaten. So good in fact that it is the recipe I follow at home. Thank you Nick for bringing this to us. This takes a while to cook properly so be sure you are surrounded with good company and have plenty of beer on hand. Enjoy!
