1 pkg yellow cake mix
2 tablespoons butter
4 medium tart apples peeled and finely chopped 4 cups
3/4 cups packed brown sugar
1 tbsp cornstarch
1 tbsp water

1 c butter softened
3 cups powdered sugar
2 tbsp heavy whipping cream
1 tsp vanilla extract
1 1/2 ground cinnamon

Prepare and cake cake mix according to package directions for cupcakes
in a large skillet heat butter over medium heat. add apples and brown sugar, cook and stir until apples are tender. 10 to 12 minute. In a small bowl mix cornstarch and water til smooth stir into pan. Bring to a boil, cook and stir until thick 1 to 2 minutes. remove from heat. cool completely.
Using a paring knife cut a 1 in wide cone shaped piece from the top of each cupcake. discard removed portion. fill cavity with apple mixture.
In a large bowl combined all frosting ingredients beat until smooth frost cupcakes.
