1/2c unsalted butter, room temp
1 1/4c firmly packed golden brown sugar
2tsp instant espresso powder
1tsp vanilla extract
2 eggs
1c all-purpose flour
3/4c macadamia nuts, coarsely chopped
3-4oz white chocolate, coarsely chopped

Directions:
Directions:
Preheated oven to 350* Buttered 8" square baking pan.

Beat butter and sugar together. When thoroughly mixed beat in the espresso powder , vanilla and eggs.
Stir in the flour and finally the nuts and chocolate.

Bake about 40 min ...toothpick test the center. Cool in pan on wire rack. Stores at room temp for 3 days.

If you don't have instant espresso powder you can put espresso beans in the grinder and pulverize them. Works fine in a pinch! I
rather like the "bits" that show in the cookie.
