5 slices bacon
1 medium onion, chopped
1 head red cabbage
Salt and pepper
1 1/2 cups brown sugar
1/2 cup Apple cider vinegar
1 tsp ground cloves
2 Tbsp cornstarch (optional)

Using a large pot or pressure cooker, brown bacon and onions together. Core and slice cabbage about 1/4 inch thick. Add cabbage, sugar, salt and pepper (lots), vinegar and cloves to pot. Stir together.I

Add water (2 cups for pressure cooker, to top of cabbage in cook pot)

Bring to boil. Turn down and summer for 2-3 hours (for stovetop method) until softened. Cook for 20 minutes if using a pressure cooker.

If desired, combine cornstarch with a little water. Add to cooked cabbage. Bring to boil until liquid is clear and shiny.
