1/4 cup cucumber, finely grated
salt and pepper
1 tablespoon olive oil
1 teaspoon white wine vinegar
2 clove garlic smashed
1/2 cup greek natural yogurt
2 teaspoons chopped fresh mint

Directions:
Directions:
1) Sprinkle the cucumber lightly with salt and leave in a colander slightly weighted down, to drain
2) Rinse the cucumber to remove the salt and squeeze excess moisture from the cucumber
3) Mix the oil and vinegar until well blended and add the garlic
4) Mix in the yogurt, chopped mint and add the drained cucumbers
5) Blend to smooth if desired
