4-5lb cubed meet...equal amounts of beef chuck and pork. Save any large bones for later.
2 lg yellow onions, diced
1med green pepper, diced (or red or both)
3-5 buds garlic, minced
2 16oz cans diced tomatoes
2 lg cans diced green chilies with juice
4-5c broth ( beef or chicken or combination of)
juice of 1 lemon OR splash of red wine
3/4 -2 T ground cumin....as your taste dictates
2 bay leaves
splash L&P Worcestershire Sauce

Cube the meat and brown in hot oil (batches) until all is browned. Save the rib bones if you used country pork ribs.

Brown onions until golden, then toss in the minced garlic , turning off the heat. Add this to the meat
along with chillies, tomatoes and peppers. Stir in the broth and drop in the Bay leaf and Worcestershire.

Lay the bones on top for cooking....makes the broth better.

Cook all day. Begin with bringing it to a boil then reduce to barely a simmer. No lid needed. Can be
made in a large crock pot instead of on stove top.(4-6-8hrs or whatever )
