Ma'amoul cookie


Ingredients:  
Ingredients:  
1 pound Cream of Wheat (regular, not instant)
4 cups all purpose flour
2½ cups clarified butter
1 teaspoon baking soda
1 cup water

Directions:
Directions:
--Mix Cream of Wheat, flour and baking soda

--Add butter, begin kneading dough, add water a little at a time until dough pulls away from sides of bowl

--Let rise for 2 hours

--Roll into balls

--Poke hole in each ball and add pecan mixture

--Bake in 300ºF on middle rack for 30 minutes or until bottom of cookie is golden brown.

--Sift finely granulated sugar over the top of the cookies
 

Pecan Mixture

1 cup pecans, finely chopped
⅔ cup sugar
2 teaspoons orange blossom water

--Mix ingredients together in small bowl and set aside

--From Tim: True Orange Blossom Water is prepared by steam distillation using a special copper still, known as a katara and fresh Mediterranean Seville Orange Blossoms. It can be prepared in a home kitchen but will lack the intensity of steam distilled version. You can also buy online from numerous sources or in halal or Middle Eastern markets.
