1 lb angel hair pasta (cooked)
1 lb crawfish (you can also use shrimp)
1 bag of baby spinach
8 ounce jar sliced mushrooms
1 cup onion, celery, bell pepper
½ stick butter
1-2 cloves garlic
1 T flour
½ cup chicken broth
1 cup heavy cream
1 cup shredded Parmesan cheese

Directions:
Directions:
Saute trinity and mushrooms in butter until soft. Add garlic and flour, stir well for a minute or two. Slowly add chicken broth, this should be a thick mixture. Slowly add cream, stirring often. Add crawfish and cook several minutes. Add the bag of spinach to the mixture, stirring as you add. Put lid on the pot and the spinach will cook down. Stir and add Parmesan cheese. Cook a minute and then slowly stir in cooked pasta. Season liberally with Creole seasoning.

I season my pasta with lots of butter and garlic salt before adding to the cram mixture.
