2 loaves white bread, dried in oven
1 large Ballard corn bread mix or any corn bread mix without sugar, prepared per directions
4 large yellow onions, chopped
1 whole stalk of celery, chopped (this is the whole head not just one rib)
2 bunches of parsley, minced
4 bunches of green onions, chopped (separate white from green tips)
½ medium bell pepper
6 eggs beaten
4 cups turkey or chicken stock
3 sticks butter
1 tablespoon poultry seasoning
Salt
Pepper

Directions:
Directions:
--Saute yellow onion, celery, white tips of green onions and bell pepper until onion is translucent

--Add parsley and green tips of green onion and remove from heat

--Crumble bread and corn bread to desired coarseness and mix together

--Add cooled stock, eggs, sauteed vegetables and seasoning

--Butter an 11 x 13 inch pan or 2 smaller pans

--Transfer dressing mixture to pan (or divide evenly between pans)

--If dressing looks dry, add turkey drippings, chicken stock or melted butter

--Bake for 1 hour in a 350ºF oven.

--From Tim: I always prepare my cornbread the night before so that it can sit and dry out some prior to using.

--From Tim: Don't skimp on the liquid, its easy to cook it a little while longer but difficult to rejuvenate dried out dressing.
