1/2 cup lime juice + zest
1-1/2 cup sugar
1 stick unsalted butter (1/4 pound)
4 extra large eggs at room temperature
1/8 tsp. salt

Your favorite tart shell crust

Directions:
Directions:
Grate the zest of one lime, only the green part.

Cream butter and sugar, add zest, add eggs one at a time. Add lime juice and salt.

Cook over low heat stirring constantly until thickened. Remove from heat and cool.

Poor into 9 or 10" tart shell. Garnish with whipped cream and lime slices.

This seems to be everyone's favorite dessert. It can be done with lemon juice as well. It's pretty with a sliced strawberry on the whipped cream.
