1 five pound chuck roast
3 medium red bliss potatoes
1 large onion, chopped
¼ large green bell pepper, chopped
2 tablespoons cumin
2 tablespoons chili powder
1 teaspoon garlic powder
5-16 ounce cans Red Beans, drained and rinsed
Salt
Pepper
8 ounce can tomato sauce
2 tablespoons butter

Directions:
Directions:
--Salt and pepper roast and brown in butter in a large pan

--When roast is turned, add onion and bell pepper, cook until onion is translucent

--Once roast is sufficiently browned, add water to cover roast

--Add chili powder, cumin and garlic powder

--Simmer for 2-2½ hours

--Add three red bliss potatoes to the meat and cook for 30 more minutes

--When roast is tender, remove meat and potatoes to separate bowl, debone roast and shred meat and potatoes

--Add drained beans and tomato sauce, return meat and potatoes to pot, cook on low boil for 30 more minutes

--Check and season to taste

--From Jane: This is great served with chopped sweet onion, chopped red pepper, sour cream and shredded cheddar cheese. I also like oyster crackers sprinkled on top.
