6 TBSP OR 3/4 STICK OF BUTTER
3 TBSP HONEY
1 TSP LEMON JUICE

PREHEAT OVEN TO 350

ARRANGE POTATOES IN A 13 BY 9 BY 2 INCH BAKING DISH. STIR IN THE COMBINED MELTED BUTTER, HONEY, AND LEMON JUICE, TOSS TO COAT. SPRINKLE GENEROUSLY WITH SALT AND PEPPER.

BAKE UNTIL TENDER WHEN PIERCED WITH A FORK, STIRRING AND TURNING OCCASIONALLY, ABOUT 1 HOUR.
