Ingredients:  
1/3 cup Champagne vinegar
2 tsp Dijon mustard
1 tsp. lemon juice
1 small shallot - finely diced
1 tsp honey
1/4 tsp salt
1/4 tsp pepper
1/2 olive oil

Directions:
Directions:
Mix together all ingredients EXCEPT Olive oil.

Gradually mix in the olive oil until fully incoporated.

This is good when you need a light salad if the main course is heavy. I paired it with my lobster bisque.
