1/2 cup (1 stick) butter softened
2 tsp vanilla flavoring
1/8 tsp salt
2 cups creamy peanut butter
2 cups pecans, chopped
2 1/2 cups graham cracker crumbs
2 1/2 cups confection (powdered) sugar, divided
2 cups chocolate chip morsels

Directions:

step 1:
- cream together the butter, vanilla flavoring, salt and peanut butter
- stir in 2 cups of powdered sugar, nuts and 1-1/2 cups of graham crackers
(save 1/2 cup of graham crackers and use only if you need it)

Step 2:
- roll into 1 inch balls and dip into remaining powdered sugar
- put peanut butter balls on a sheet pan
- refrigerate for 1 hour or until firm

step 3:
- melt chocolate morsels in a double boiler
- dip the peanut butter balls in the melted chocolate using toothpicks
- set the peanut butter balls on wax paper to harden
