1 lb red potatoes, quartered
2 TBSP diced onion
2 TBSP butter, melted
1 TBSP honey
1 tsp dry mustard
1 pinch salt
1 pinch ground black pepper

Directions:
Directions:
1. Preheat oven to 400 degrees F.
2. Lightly coat an 13x9 inch baking dish with nonstick cooking spray.
3. Place potatoes in a single layer in prepared dish, and top with onion.
4. In a small bowl, combine melted butter, honey, mustard, salt and pepper.
5. Drizzle over potatoes and onion.
6. Bake in the preheated 375 degrees F oven for 35 minutes or until tender
7. Stirring halfway through the cooking time.
