2 lbs. boneless pork tenderloin
3 tbsp. olive oil
1 (20oz) can of pineapple chunks
1/2 brown sugar - packed
1/2 cup vinegar
1/2 tsp salt
2 medium carrots - thin diagonal slices
1 medium green pepper - cut into 3/4' strips
1 clove garlic - minced
2 tsp soy sauce
2 tbsp. corn starch
2 tbsp. cold water

Cut the pork into bite sized pieces. In a large skillet add olive oil and some of the pork. Brown on each side, 5 to 8 minutes. (no longer pink). Fry in small batches so as not to over crowd the pan. Set aside.

Drain pineapple into a 1 cup measuring cup adding water if not quite 1 cup. Heat the juice, brown sugar, vinegar, salt, soy sauce, carrots, and garlic in a large dutch oven (or stock pot), bring to a boil, reduce heat to low. Cover and simmer about 6 or 7 minutes.

Add pork. Here is where it gets a bit tricky (not really but some might think so). If yu are serving right away thicken the sauce with the cornstarch and water, adding, pineapple, peppers and carrots.

If you are going to be longer than an hour skip the thickening step and just add the pork, peppers, pineapple and carrots. If you thicken too early your sauce will break and you will not be able to thicken it further.

For the vinegar, it calls for white, however, I use what ever I have on hand. Just know the flavor profile may be a bit different if using flavored. It doesn't seem to change it much as I have used many different kinds.

For the carrots, here too I cheat a bit, I buy the bag of already shredded carrots.
