• 1/2 onion - diced
• 1/2 bell pepper – diced
• 1/2 tsp salt
• 1 clove garlic - minced
• 2 tsp or 2 packets of Goya Coriander & Annatto Seasoning
• 1 tsp dried basil
• 1 tsp dried oregano
• 2 tsp cumin
• 2 15 oz cans black beans (undrained)
• 1 15 oz can petite diced tomatoes (drained)

Directions:

1. Heat 2 TBSP of oil on medium heat
2. Add onion, peppers, and salt and sauté for 2-3 minutes
3. Add garlic and cook for an addition 1 minute
4. Add seasonings to pan and cook for an addition minute.
5. Add tomatoes and let cook for 2 minutes
6. Add cans of beans with the liquid and bring to a boil.
7. Once it is boiling, reduce heat and simmer for 15-20 minutes.
(Stir occasionally to prevent the bottom from burning)
