Kibby Beef Mixture


Ingredients:

3 pounds bottom round roast, ground twice
32 ounces number 1 wheat (bulgur)
⅓ bell pepper
3 large yellow onions
¼ teaspoon allspice
¼ teaspoon cinnamon
dried mint
salt
pepper

Directions:
Directions:
--Salt meat

--Clean wheat by covering with water and rinse

--Drain wheat and let dry for 30 minutes

--Place bell pepper, onions, allspice and cinnamon in food processor. Add dried mint, salt and pepper to preferred taste.

--Mix in food processor until finely chopped

--Add wheat and seasoned vegetable mixture to meat. Add additional salt, pepper and mint to taste

--Mix thoroughly

--Pat out patties

--Add approximately 1 tablespoon fat mixture to the center of patty

--Top with another patty and seal edges

--Cook close to coals over med/high heat, approximately 5 minutes per side

--Serve with laban (plain yogurt). Mema Betty always liked Axelrod yogurt (hard to find).

1 pound kidney fat, ground
⅔ bell pepper, diced
1 large yellow onion, diced
salt
pepper
dried mint

Directions:

--Combine bell pepper, onion, mix thoroughly

--Season with salt, pepper and mint to taste

--Add kidney fat and mix well

--Set aside for use in patties
