For a 9" Pie
4 Eggs
⅔ Cup Sugar
½ Teaspoon Salt
¼ Teaspoon Nutmeg
*2⅔ Cups scalding hot milk (Use part cream for an extra rich pie)
1 Teaspoon Vanilla

Directions:
Directions:
Heat oven to 450º. Beat the eggs slightly with beater in a large bowl. Then beat in the rest
of the ingredients. Pour into a pastry-lined pie dish. Bake for 15 minutes the reduce the heat
to 350º and bake 10 to 15 minutes more. Bake just until a bread knife inserted into the center
comes out clean. The center may still look a bit soft, but will set as it cools. Serve warm or
cold. Very good with whipped cream or plain.

If you like Coconut pie you can omit the Nutmeg and add ¾ cup shredded coconut.
