Cake:
4 c. peeled and diced apples
1 c. chopped pecans
2 c. sugar
3 c. flour
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/2 tsp. salt
2 1/4 tsp. baking soda
1 c. vegetable oil
1 tsp. vanilla
2 eggs, well beaten

Icing:
1 1/2 cups powdered sugar
1/2 c. orange juice

Cake:
- Mix apples, pecans & sugar. Let stand 1 hour. Stir often so it will make its own juice.
- Preheat oven to 350º. Prepare bundt pan with shortening and flour.
- Sift all dry ingredients together and add to apples. Add oil and vanilla. Add well beaten eggs. MIX BY HAND.
- Bake for 1 1/4 hours in preheated oven.

Icing:
- Bring powdered sugar and orange juice to boil. Boil 3 minutes over medium heat. Let cook in pan. Pour over hot cake.
