Stuffed Pork Chops Recipe

6 bone in center cut pork chops
1 box Bells Stuffing
1 small onion - finely chopped
3 stalks celery, leaves too - finely chopped
1 1/2 sticks butter
2 1/2 cups chicken stock or water
2 (14oz) cans stewed tomatoes
salt and pepper to taste

Preheat oven to 350º.

In a large skillet, melt butter. Add celery and onion and cook until no longer translucent and a bit carmelized. About 5 to 10 minutes, depending on the heat of skillet. Don't cook on too high a heat or the onions will burn. Set aside.

Pour Bells stuffing mix into a large bowl adding the cooked onions and celery, stir. Add the stock, stirring to coat. If the mixture is still to thick add a tiny bit more stock. Cover, let set 5 minutes.

Pour the stewed tomatoes into a 9x13x2" pan. Season pork with salt and pepper and place on top of the tomatoes. Gently top the pork with the stuffing.

Bake for 30-45 minutes or until a thermometer reads 145º.
