3 Bell Peppers
2 Jalapeno peppers ( 2 = tasty, 3 = hot)
1 1/2 C white vinegar
6 1/2 C sugar
2 pkgs pectin
green food coloring

Directions:
Directions:
Substitute whatever amount of Jalapenos you use for that amout of bell pepper. Blend all peppers and vinegar in blender till smooth. Pour into kettle. Stir in pectin and bring to a boil. Add measured sugar ALL AT ONCE and bring mixture back to a rolling boil. Boil hard EXACTLY 2 minutes. Remove from heat, stir in enough good coloring to make it a pretty shade of light green. Skim off foam and put into sterile glasses. No wax needed. .
