Snapper or Grouper fillets
1 cup brown sugar
1 cup soy sauce
3 tablespoons chili garlic sauce (can be found in the Asian foods section of most markets)
1 teaspoon fish sauce
1 teaspoon key lime juice
Cornstarch
Olive Oil

Directions:
Directions:
--Mix brown sugar, soy sauce, chili garlic sauce, fish sauce and key lime juice in a flat pan large enough to lay fish fillets in to coat.

--Dust fillets with cornstarch and saute with olive oil in a hot pan.

--When browned, remove from pan and coat in liquid sauce mixture.

--Remove from sauce and return to saute pan to quickly brown each side again.

--Drizzle remaining sauce over cooked fillets and serve.

--Sizzlin' Snapper was one of our favorite dishes at Tamara's in Apalachicola, FL on Tapas night.

--Liz loved this dish. One night she went back to the kitchen to ask the chef for his recipe and preparation directions. I don't believe she got the whole recipe but this is what she came up with and it is good, probably better than Tamara's.
