1 lb. hearty elbow pasta or medium size shells
8 oz shredded sharp cheddar, or a combo of cheeses. Smoked Gouda is very good.
quart of whole or 2 % (at the very least) milk
2 T. butter

Directions:
Directions:
Pour the milk in a large saucepan. Turn on medium to medium-high heat. Add pasta and stir until most of the milk has absorbed into the pasta. It'll take a little while. You don't want your heat too high or it'll scorch. If you have to add more milk until the noodles are al dente then go ahead and add little splashes of milk at a time. You want a good creamy thick sauciness about it. Take off burner when cooked and stir in the butter. Then stir in the shredded cheese until melted and mixed well. You can eat it at this point. But I like to bake it for 20 minutes to get it a little drier.
