1 can whole green chilies (1 lb 10 oz) or fresh roasted peppers
1 lb grated Monterey Jack cheese
5 large eggs
1/4 c. flour
1 1/4 c. milk
1/2 t. salt
black pepper
1/2 lb. cheddar cheese
paprika

Directions:
Directions:
Grease 9 x 13 pan. Rinse seeds out of peppers, pat dry. Cover bottom of pan with half the chilies, then all the Monterey Jack cheese, then the rest of the chilies. Beat eggs and gradually add flour, beating till smooth. Add milk, salt and pepper and beat till smooth. Pour over everything in pan. Sprinkle with all the cheddar cheese, then sprinkle with paprika. Bake at 350 for 45 minutes, uncovered.
