1 pound potatoes
1 ½ ounce green pepper, chopped fine
1 ounce pimento, chopped fine
½ tsp. salt
½ tsp. pepper
⅓ tsp. paprika
non-stick cooking spray

Directions:
Directions:
Preheat oven to 350º.

Wash, pare and boil potatoes until tender. Chop into bite sized pieces. Sauté green pepper and pimento. Add potatoes. Sprinkle with salt, pepper and paprika. Turn into casserole dish prepared with non-stick spray.

Bake in 350º oven until heated through.
