Dough -
5 c. flour 1 tsp. salt 1/2 tsp. cinnamon 1/2 tsp. soda 3 eggs, slightly beaten
1 tsp. vanilla 1 c. shortening 2 c. brown sugar

Filling -
1 c. water 1 c. sugar 1 T. butter 2 c. dates, chopped 1/4 c. nuts, chopped

Directions:
Filling - Combine water, sugar, butter, dates and nuts. Cook until thick, stirring constantly to prevent scorching. Remove from heat. Alllow filling to cool and then chill.
Dough - Sift flour, salt, cinnamon and soda. Combine eggs and vanilla. Cream shortening and brown sugar. Stin in eggs and vanilla mixture. Add mixture to dry ingredients and blend well. Divide dough into 4 parts. Chill 2 - 3 hours. After dough has been chilled, roll out one part of it on a well floured board to about 1/4" thickness. Spread 1/4 filling evenly on dough. Then roll up to resemble jelly roll. Do the same for the other 3 parts. Place the rolls in the refrigerator overnight Next day slice rolls into slices 1/2" thickness. Place slices on greased baking sheet and bake at 375º for 15 minutes. Remove cookies with wide spatula.
