2 ounces ground turkey, cooked/drained before weighing
½ cup tomato sauce
5 ounces eggplant, peeled, diced and cooked
1 ounce ricotta cheese
non-stick cooking spray

Directions:
Directions:
Preheat oven to 350º.

Spray a small casserole dish with non-stick cooking spray. Layer ingredients as follows: ¼ cup tomato sauce, eggplant, 2 ounces turkey, 1 ounce ricotta. Pour remaining tomato sauce over all.

Bake until heated through.

One casserole = 3 oz. protein, 5 oz. vegetable, 1/2 cup optional tomato sauce
