3 pounds turkey, beef or tuna, ground
2 medium onions, diced
2 stalks celery, diced
1 medium carrot, diced
1 medium bell pepper, diced
2-3 cubes chicken, beef or seafood bouillon (no sugar)
3 large eggs
2-3 cups oat bran
garlic, pepper, soy sauce to taste
non-stick cooking spray

Directions:
Directions:
Preheat oven to 350º.

Dissolve bouillon cubes in a minimal amount of water. Cook all vegetables together in large fry pan using non-stick spray. Drain well. Whisk the eggs. Mix all ingredients in a large bowl, adding the oat bran as needed to produce a loaf that will stand of its own accord.

Place loaf on a foil covered cookie sheet that has been sprayed with non-stick spray. Make sure there are no hollow spots in the loaf. Smooth loaf with wet hands to eliminate any rough areas.

Bake at 350º for 30 to 45 minutes. Loaf is done when internal temperature at the center is 165º for turkey or beef. (Tuna is precooked, so temperature is not critical.) Remove from oven and drain. Allow loaf to rest 30 minutes before serving.
