2 cups cornmeal
1 cup flour
1/4 cup sugar
2 tsp baking powder
1 tsp baking soda
1 tsp salt
5 tbsp. butter
1 1/2 cup milk
2 eggs

Directions:
Directions:
Preheat oven to 400º F

Combine in a large bowl cornmeal, flour, sugar, baking powder, baking soda, and salt. Put 1/2 cup milk in a measuring cup, add 2 tbsp. butter cut into pieces. Put in the microwave and heat for 1 minute so that butter melted into the milk. Pour this over the dry ingredients and begin stirring. Gradually add the additional cup of milk and stir, then add the eggs and continue stirring until thoroughly combined.

Heat a skillet over medium heat and melt the 3 remaining tablespoons of butter in it. Add the batter and shake the pan gently to evenly distribute.

Transfer the skillet to the oven and cook for about 25 minutes, until light golden brown and a toothpick inserted in the middle comes out clean.

Remove from oven and let cool before slicing and serving.
