Pie Filling:
500 ml water
1 unbaked pie shell
250 ml sugar
15 ml lemon juice
10 ml cream of tartar
30 Ritz crackers
2 ml cinnamon

Crumb Topping:
250 ml finely rolled Ritz crackers crumbs (approx. 30 crackers)
125 ml lightly packed brown sugar
2 ml cinnamon
75 ml melted butter (or margarine)

Directions:
Directions:
Combine water, sugar, and cream of tartar. Bring to a boil. Drop in Ritz crackers whole and keep boiling for 5 minutes. Pour mixture into pie shell; sprinkle with lemon juice and cinnamon. Combine ingredients for crumb topping, sprinkle over pie.

Bake @ 400⁰ F for 15 minutes. Then, reduce heat to 350⁰ F and continue baking for an additional 15 – 20 minutes.

Serve warm. Makes 6 – 8 servings.

Ruth suggestion!
Instead of putting in the lemon juice, try putting in 5 tsp of margarine. Just drop them into the pie.
