3 Tbsp. all-purpose flour
1 2/3 c. sugar
1 c. mashed sweet potatoes
2 eggs
1/4 c. light corn syrup
1/4 tsp. ground nutmeg
pinch of salt
1/2 c. butter or margarine
3/4 c. evaporated milk
1 (9-inch) unbaked pastry shell

Directions:
Directions:
In large mixing bowl, combine the flour and sugar; add potatoes, eggs, corn syrup, nutmeg, butter and evaporated milk. Mix or beat well. Pour into pastry shell. Bake at 350 degrees for 55 to 60 minutes. Yield: 8 servings.
