1 1/4 cups vegetable oil
2 cups granulated sugar
4 eggs
2 cups flour
3 cups grated carrots
1 cup chopped walnuts
1/2 teaspoon salt
2 teaspoons cinnamon
2 teaspoons baking soda
2 teaspoons baking powder

Frosting

8 ounces cream cheese, softened
1 stick butter, softened
3/4 box confectioners sugar
1 teaspoon vanilla

Directions:
Directions:
Preheat oven to 350º.
Combine oil and sugar in large bowl.
Let sit for 15 minutes then cream together.
Add eggs, one at a time and mix well.
In a small bowl combine flour, salt, cinnamon, baking soda and baking powder.
Add to oil, sugar and egg mixture a little at a time.
Pour mixture into 9x13 dish.
Bake 40-45 minutes.
Remove from oven and cool completely.

Frosting

Combine all ingredients and cream together until smooth.

Frost the cake once completely cooled.
