1 pound carrots, coarsely chopped

1/2 cup margarine

teaspoon vanilla extract
3 eggs

3 tablespoons all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart casserole dish.
Bring a large pot of salted water to a boil. Add carrots and cook until tender, 15 to 20 minutes. Drain and mash. Stir in margarine, vanilla extract and eggs; mix well. Sift together flour, baking powder, salt and sugar; stir into carrot mixture and blend until smooth. Transfer to prepared casserole dish.
Bake for 45 minutes

I had never had this until my dear friend Kaye, who has gone to Jesus told me about it and my other friend Jewel told me how to make it. She first ate it at a cafeteria named Pickadilly,that was in south side. When I make it and eat it I think about my two dear friends,I miss them so much. Kaye use to tell how she saved me! she was 14 and me 19. One time we were at Jacks,with my girl cousins. I had a car but had no licensed. I could drive in Helena, but not on 31. But the girls wanted to go get a shake and so I finally said yes. Jacks was by the hospital then. tThese guys came up kinda flirting. When it was time to leave they were following us home I knew my daddy would have a fit, so I pulled into the baptist church where I went.I use this opportunity to tell one of the boys about Jesus, the rest of the group were loud and noisy, so the guy suggested we go inside the church so we could talk, I thought it was a great idea, Kaye stopped me and said no he doesn't want Jesus. The police came and we jumped into the bushes and he called out Jane you need to go home and made the boys leave I still think he wanted to hear about Jesus
