Kibby Beef Mixture


Ingredients:

3 pounds bottom round roast--ground twice
32 ounces number one wheat
⅓ bell pepper
3 large yellow onions
¼ teaspoon allspice
¼ teaspoon cinnamon
mint
salt
pepper
clarified butter

Meat Mixture

--salt beef

--Rinse wheat with cool water, drain and let dry for 30 minutes.

--Place bell pepper, onion, allspice and cinnamon in food processor, process until minced adding salt, pepper and mint to taste.

--In a bowl add vegetable mix, wheat and meat. Mix thoroughly. Add additional salt, pepper and mint to taste.

Making the Kibby

--In a buttered pan (11 x 13), pat half of the meat mixture along bottom of pan.

--Put a layer of Hoshwee (See recipe below) on top of raw meat mixture.

--Top with remainder of the meat mixture and pat level.

--Score top of meat in diamond shapes and along pan edges.

--Top with clarified butter.

--Bake in 350ºF oven on middle rack for 30 minutes. Move to top rack for 30 to 40 minutes. Broil if necessary to brown top.
 

Hoshwee

1 ½ pounds ground chuck
4 large onions, chopped
⅓ bell pepper, chopped
salt
pepper
dried mint
¼ teaspoon allspice
¼ teaspoon cinnamon
½ stick butter
¼ cup pine nuts

--Brown meat

--Add onion and bell pepper and saute until translucent. Add spices and salt and pepper to taste.

--In a separate pan, saute pine nuts in clarified butter. Add to mixture.

--Set aside to be used later.

--Just as a note, the edge pieces are the most sought after, be sure and save one of these crispy pieces of goodness for yourself.

Number 1 or Type 1 flour is less refined than typical refined flour and contains more bran and wheat germ which improve its nutritional value and make it easier to digest. This flour can be found in some Middle Eastern markets as well as online.
