1 stick of butter
1 cup granulated sugar
3 eggs
2 cups flour sifted before measuring (do not tamp or pack)
1 teaspoon baking soda
¼ teaspoon salt
1 cup finely chopped pecans
1 teaspoon vanilla
3 ripe bananas

Directions:
Directions:
--Sift flour, baking soda and salt together.

--Flour the pecans. (This will ensure they are evenly distributed in the loaf)

--Cream butter and sugar together.

--Add vanilla.

--Add one egg at a time mixing well after each addition.

--Gradually add dry ingredients.

--Mash bananas and stir into mixture.Stir in floured pecans.

--Grease and flour loaf pan.

--Pour mixture into loaf pan.

--Bake at 300ºF for 1 hour.

Zoe was Mema Betty's mother. Her full name was Zora Kaleel.

Aunt Esther also made fruit cakes which she sold to Neiman Marcus.
