Pie Filling


Ingredients:

3 eggs separated (yolks for filling, reserve whites for meringue)
½ cup sugar
2 tablespoons flour
pinch of salt
1 cup of milk
juice of 1 lemon
grated rind of 1 lemon
2 tablespoons butter

Directions:
Directions:
--Beat egg yolks, ½ cup sugar and flour with a pinch of salt.

--Scald milk in top of double boiler.

--Mix some scalded milk to egg mixture slowly to temper egg mixture. When warm, add egg mixture slowly into remaining scalded milk stirring constantly.

--Add lemon juice and grated rind.

--Allow mixture to cool.

--Pour mixture into pie crust. (Store bought or recipe of your choice)

--Top with Meringue

--Bake at 350ºF 12-15 minutes or until lightly browned.

--Cool before cutting.

--Slice and enjoy.

¼ teaspoon cream of tartar

--Add cream of tartar to egg whites.

--Beat egg whites until stiff (glossy and smooth), gradually beating in sugar.

--Spread meringue on filling, ensure it touches crust all the way around.
