5 eggs
3 C sugar
1 1/2 C oil
1 tsp vanilla
3 C grated zucchini
3 C flour
1 1/2 tsp baking powder
1/2 tsp salt
1 tsp baking soda
1 tsp allspice
2 tsp cinnamon

optional: 1/2 C nuts

Directions:
Directions:
Beat eggs, add sugar, oil and vanilla until light and fluffy.

Grate 3 cups zucchini and add to above mixture.

Mix together flour, baking powder, salt, baking soda, allspice and cinnamon. Add to batter. Add nuts if you are including them.

Grease and flour bundt or tube pan and bake at 350 for approximately one hour.

You can make individual loafs or muffins if you don't want a large cake. Just make sure to watch the baking time.

I don't always have allspice, so I put in more cinnamon. More cinnamon in anything is always my motto.
