8 peeled and cut up potatoes
1 container of Chicken or vegetable broth
2 tbsp of Butter
1 large Onion peeled and chopped
Couple slices of cooked Bacon (optional)
Salt and Pepper to taste




Directions:
Directions:
Cook onion in Butter until golden slightly caramelized

Add Potatoes and cover with water (1 inch above potatoes)

Add Broth, Salt, Pepper

Boil and then simmer for 45 minute to hour

Crumble bacon in and simmer for 15 minutes

Serve with fresh bread!
