Salad:
Mixed baby spring greens or any mixture of greens
Sliced red onion
Dried cherries or cranberries
Roasted pine nuts
Crumbled blue cheese or gorgonzola

Raspberry Vinaigrette Dressing:
6 Tbsp raspberry vinegar
6 Tbsp raspberry jam (no seeds)
1 cup vegetable/canola oil

Directions:
Directions:
Blend raspberry vinegar and jam in blender or food processor. With machine running gradually add oil until well blended. Add salt and pepper to taste.

Prepare salad by topping greens with onion, dried cherries, pine nuts, and cheese. Toss with a generous amount of dressing.
