Ingredients:  
1 1/4 cup flour
3/4 cup cornmeal
1/4 cup sugar
1 Tbsp baking powder
1 tsp salt
2 lg eggs, beaten
2 Tbsp honey
3/4 cup milk
1/2 butter, melted and slightly cooled

Optional:
1 can (127 ml) chopped green chiles, or
1 jalapeno pepper, finely chopped
3/4 cup aged cheddar, grated

Directions:
Directions:
Heat oven to 350º
Grease or line 12 muffins cups.

Whisk together the dry ingredients.
Separately, whisk together the wet ingredients.
Incorporate the wet and dry.
Fill each muffin cup about 3/4 full.
Bake for 17-20 mins.
Serve warm.
