1 tbsp olive oil
1 medium onion, chopped
2 garlic cloves crushed
1 (14 1/2 oz) can ground peeled tomatoes
5 cups vegetable stock of 5 cups chicken stock
Kosher salt & freshly ground pepper to taste
1/2 cup loosely packed fresh basil, thinly sliced

Heat olive oil in a large soup pot over medium high heat

Add the onion and cook, stirring often until softened, then add the garlic, being careful not to burn it.

Add the tomatoes and the stock. Bring to a boil and then reduce to a simmer.

Cook until the soup is slightly thickened, about 20 minutes.

Season with the salt & pepper. Stir in the basil.

Place pot of soup in the sink and using a stick blender, blend until smooth.
