Cake:
2 cups chopped apples with 1 t. baking soda added
1 cup sugar
2 cups flour
1/2 cup shortening and oil
pinch of salt
1 t. cinnamon
1 t. allspice
1 t. vanilla

Caramel Sauce:
1 stick butter-melted with 1 cup brown sugar. Cook and stir until smooth. Add 2 t.vanilla (or even better-2 T. bourbon!) along with 1/8 cup 1/2 and 1/2 or cream. Stir and cook on low until smooth and glossy

Allow diced apples to sit with baking soda stirred in for a few minutes.
Mix all dry ingredients together and add to apple mix along with shortening or oil- put in 9 x 13 pan.
This is an old time recipe, many of which called for shortening. I always use oil in this since shortening is not usually on hand.
Mix well and bake in 325 oven. Dough is very thick and stiff. Bake until set and not doughy in middle-
approximately 45 minutes- 1hour.

My mom made this cake for as long as I can remember. She always made for our friends and neighbors during the holidays and we would run around delivering them. She usually made in 2 layers and covered with a caramel icing but I serve with warm caramel sauce- this dessert is always a hit and can double as a breakfast item (hey it has fruit!)
