Lasagna Noodles - 1 box
Turkey burger - 2 lbs
Ricotta cheese - 2 lbs
Cottage cheese - 2 lbs
Mozzarella cheese - 1 lb shredded mozzarella
Parmesan cheese - 8 oz freshly grated
Baby Spinach - 3 cups of fresh baby spinach
Mushrooms - 8 ozs fresh or canned
Pasta Sauce - 16 ozs of your favorite pasta sauce (garden chunky works well)
Diced tomatoes - 1 can drained
Eggs - 3 large eggs
Garlic - 3 tbsp minced garlic
Basil - 2 tbsp.
Italian seasoning - 1 tbsp.

*Preheat oven to 375º. In a large pot on medium-high heat, cook the lasagna noodles al dente, and remove to cool somewhat before having to handle in the layering process. In a separate frying pan, brown the turkey burger.

*In the meantime, in a large mixing bowl, add the ricotta cheese, cottage cheese, 3/4 of the mozzarella cheese, parmesan cheese, all 3 eggs mixing thoroughly before adding the fresh baby spinach.

*In a large saucepan over medium heat, simmer the pasta sauce, drained diced tomatoes, mushrooms, garlic, basil, and Italian seasoning, for about 6 minutes.

*In 2 or 3 very large casserole dishes you will layer everything. Start the layering with just the pasta sauce mixture (once the first sauce layer is put down, incorporate the turkey burger to the sauce mixture0, then a layer of noodles. Next is a layer of the cheese mixture, then a layer of the burger and sauce mixture. Repeat this order of layering to the top. Once you reached the desired number of layers, the top should consist of just a layer of sauce then the very last layer is the remainder of the mozzarella cheese.

*Cover all dishes with tin foil and bake in the preheated oven for 1 hour, all at the same time, until thoroughly heated. You will see the sauce boiling when it is heated properly. Remove foil and brown the cheese lightly for about 15 more minutes.

*Let sit and cool for at least 15 minutes, to avoid servings from falling apart when cutting into it. You may want to cook some garlic bread while the lasagna is cooling off!
