1 cup enriched yellow corn meal
1 cup all-purpose flour
2 to 4 tablespoons sugar
4 teaspoons baking powder
1/2 teaspoon salt
1 cup milk/ or buttermilk
1 egg
1/4 cup vegetable oil

Directions:
Directions:
1. Preheat oven to 425 degrees
2. In large bowl, combine corn meal, flour, sugar, baking powder and salt.
3. Add milk, egg and oil. Beat until fairly smooth, about 1 minute.
4. Bake in ungreased or sprayed 8-inch baking pan or skillet for 20-23 minutes or until wooden pick inserted in center comes out clean.

You can omit the sugar or substitute stevia.

This recipe was mostly found on corn meal bags...I’ve adjusted it over the years. I always cook it in a cast iron fry pan. You get a better golden crust that way.
