1 c. sugar
1 jar baby carrots
2 eggs
1 tsp. baking soda
1/8 tsp. nutmeg
2/3 c. oil
1 ½ c. all-purpose flour
1 tsp. baking powder
½ c. walnuts (chopped)

Directions:
Directions:
Preheat oven to 350°.
Sift and mix dry ingredients together. Mix sugar, oil and eggs and add to dry ingredients. Add carrots and nuts and blend well. Pour into large, well-greased, loaf pan and bake for 1 hour, or until toothpick inserted into the center comes out clean.
